If you know me, you know I love condiments. Fridge full of them. Store-bought and home-spun.
What I’ve been making the most lately is this Fried Lemon Garlic Rig. A rig is defined as “an undefinable flavorful sauce that is usually chunky and can be used to rig up just about anything”. I’ve been spooning it over roasted broccolini, sweet potatoes, soft cheeses, just boiled pasta, grilled chicken, and poached fish. I’ve been making it in 10 lemon batches to have on hand. It will last in the fridge for a good couple of weeks without getting weird.

1 lemon, seeds removed and sliced thinly
4 cloves garlic, minced
1 sprig rosemary, finely minced
1/2 cup olive oil
In a small frying pan, heat ¼ cup olive oil over medium-high heat
Add the lemon slices and fry undisturbed until softened— let them take on a bit of browning
Reduce the heat to medium and add the garlic and rosemary with a big pinch of salt and fry until just starting to brown, about 2 minutes
Remove from the heat and add another ¼ cup of olive oil to cool the mixture and suspend the garlic from cooking further
